Donna's White Chocolate Jello Pudding Dessert

- 1 box Jello White Chocolate Fat-Free, Sugar Free Pudding
- Fat-free Cool Whip
- Biscottini (Mini Lady Fingers)
| Mix: | Jello pudding as directed on box.
|
| Crush: | 2 Biscottini biscuits and place in bottom of a small bowl.
|
| Add: | 1 serving of the prepared pudding on top.
|
| Place: | 4 Tbsp. Fat-free Cool Whip on top of pudding.
|
| Top: | 2 Biscottini biscuits, finely crushed (powder).
|
This is a great dessert for Weight Watcher's because 1 serving is only 2 points:
Pudding: 70 calories, 0 fat, 0 fiber, 6 grams carbs: 0 Point
Biscottini (4): 40 calories, 0.33 grams fat, 0.33 grams fiber, 8.3 grams carbs: 1 Point
Cool Whip: 30 calories, 0 fat, 0 fiber, 6 grams carbs: 1 Point
Low-Carb No Bake Lemon Cheese Cake

- 1/4 cup boiling water
- 1 small box (3 oz) lemon sugar free gelatin (Cotte's has a Splenda version)
- 16 oz (2 8-oz packages) Cream Cheese
- 1/2 cup granular Splenda
- 1/2 cup sour cream
- 1/4 cup heavy cream
- Additional 1 cup heavy cream
- Additional 1/4 cup Splenda
In a small bowl, mix gelatin with boiling water until fully dissolved. Set aside. In a
separate large bowl, blend cream cheese with next three ingredients. Beat until
very
smooth. Add gelatin mixture and beat again to thoroughly mix and smooth. Pour into Pyrex
or Corning PAM sprayed pie plate. Refrigerate 2-3 hours.
Whip additional 1 cup heavy cream with Splenda and billow over the top of the cheesecake.
Top with chopped walnuts or slivered almonds if desired.
Total carbs in entire cheesecake is 25 grams!
Low-Carb Individual Chocolate Brownie

- 1/4 cup Almond Flour
- 2 Tbs. Cocoa Powder
- 1/4 tsp Baking Powder
- 5 tsp. artificial sweetener (Splenda)
- 2 Tbs. melted butter
- 1 Tbs. Low-Carb Hazelnut Syrup
- 1 egg
- 1 oz. Cream Cheese
- 1 Tbs. Chopped Walnuts
- dash salt
Place all ingredients in a mixer/chopper; mix well for 30 seconds. Pour into a 2
cup glass bowl or measuring cup. Microwave on High for 1 min, 25 seconds. Let stand for
a minute and invert onto a plate. It may be wet; if so cook 15 seconds more. It may still
look a little wet, but that's OK; that moisture will evaporate when it's cooled.
About 7 carbs for the whole brownie!
